CHEESY RISOTTO CAPSICUMS

Colourful and healthy
4 large red capsicums
2tbl FIRETREE LIQUID SMOKE
1 medium onion diced
3 baby eggplants diced
2 cloves garlic sliced
500g arborio rice
2 cups chicken stock
1/2 chopped fresh basil leaves
1 cup pizza cheese
Instructions
Preheat oven to 220C
Grease baking dish
Slice tops from capsicums
Scoop seeds out
Place capsicums and tops in baking dish with FIRETREE LIQUID SMOKE and bake for 20 mins
Heat oil in frying pan.Place onion and garlic in pan and saute untill tender. Add eggplant and cook for 2-3 mins.
Add rice then slowly add small amounts of stock. Simmer untill all liquid has been absorbed.
Spoon mixture into capsicums and top with cheese. Place tops back on capsicums.
Place dish under grill or in oven until cheese has melted and gone golden.
